When you want to enjoy imaginative fusion cuisine served with flair, you need to take a trip on over to Fond. Located in the heart of Lahaina, this quaint eatery serves as a great place to kick back and relax while satisfying all your cravings. Their chill atmosphere, aloha spirit, and delicious fare all come together to create a dining experience to remember.

As the owner and chef, Jojo Vasquez leans on his diverse culinary influences to dream up truly tasty dishes made using fresh, local ingredients. All his dishes reflect his background, often featuring Hawaiian, Filipino, and American flavors. He doesn’t just stop at making great food either. He also goes above and beyond in plating them up with tons of artistic flair. As a result of his prowess in the kitchen, you’re sure to feel wholly impressed with each dish from first glance through to the last bite.

Their offerings change all week long, depending on what day and time you arrive. On Wednesday through Saturday, you can pop on over to eat off the lunch menu from 11 am to 4 pm. During that time, they have all their most popular midday dishes priced at 25% off. After 4 pm, dinner starts in earnest, allowing you to explore even more delightful flavor combinations.

The real magic happens on Sunday, however, when they roll out brunch to start the day, and then finish with the Chef’s Counter. In order to take part in that special evening event, you must make your reservations well ahead of your visit. Chef Vasquez closes down the restaurant to all but a dozen lucky patrons. Then, he treats them to the dinner party of a lifetime. You’ll get to watch in awe as he prepares every dish while learning all about his influences, techniques, and passions.

Whether you come by for the intimate Chef’s Counter experience or just stop in for a quick lunch, you’re likely to enjoy a lowkey atmosphere and quality service always. The industrial aesthetic sets the stage for an awesome meal, while the glass pendant lights give the restaurant a soft glow. On top of that, their aloha spirit shines bright in all they do, making you feel right at home upon walking through the doors.

Try their most popular items:

Hangover Burger
For a hearty creation that hits on all the greatest flavors, order up the Hangover Burger. This masterpiece begins with a four-ounce beef patty grilled up just right and put it on a toasted brioche bun. Over that, they add cheddar cheese, smoked bacon, fried egg, lettuce, tomato, and onion. Sriracha aioli gets drizzled on top to bring it all together, and then fries go alongside.

Tuna Poke Bento
The Tuna Poke Bento promises to delight with its exquisite flavors and equally amazing presentation. They create this dish by filling each compartment with tuna poke, Asian slaw, white rice, umami egg, and Japanese mayo. If you need a little bit more to fill out your meal, pair your bento with their “PLT” Lettuce Wraps.

Korean Fried Chicken
When you want your meal to come with a zesty kick, get the Korean Fried Chicken. They start this popular meal by coating bone-in chicken with their signature breading. Then, they pop it in the deep fryer until golden brown and drizzle on a spicy sauce. After that, they put the crispy, saucy chicken on the plate with an umami egg, house pickles, and potato salad.

Although no easy feat, do all you can to save room for dessert. With its creamy cheesecake flavors and caramelized top, the Basque Cheese Cake is a must. If that’s not really your style, then get the Cookie Sundae instead. In that dish, you get a huge scoop of Roselani Ice Cream covered in chocolate syrup and surrounded by warm chocolate chip cookies.
