When you want to fill up on the tastiest Thai classics and more, skip on over to Thai Mee Up. Located just outside the Kahului Costco, this food truck maintains a truly loyal following, and for good reason. All their dishes are perfectly prepared using traditional recipes and the freshest local ingredients. They also work fast, so you hardly ever have to wait too long to enjoy your meal.

Since they’re located right by Costco, there’s ample parking for all their guests. That’s a good thing because you’re almost always going to find a line going up to the order window. The line moves fast, so it’s best to walk up to the left side of the window and explore the menu before queuing up.

On their menu, you’ll find all their main dishes, like Fried Rice and Pad Thai, listed with a rundown of the ingredients. Below that, they have a few of their special menu items, including Drunken Noodles. Review all the ingredients in each item that catches your eye to see if you like them. If not, it’s best to choose something else because no ingredient substitutions are allowed.

Check their Instagram page before heading out the door if you want something altogether different. They often have limited-time menu items posted there, such as Curry Noodles with Seared Scallops, Steak and Lobster, and Grilled Lamb Chops.

Once you put in your order, you’ll need to wait at a nearby picnic table while the team whips up your food. During the lunch hour, you might be on site for 45 minutes or more before enjoying that first bite. But that’s their busiest time. More often than not, they’ll deliver your food to your table within about 20 minutes despite making it all when you order it.

You’ll surely love these items at Thai Mee Up:

Pad Thai Noodles
For a true classic, treat yourself to the Pad Thai Noodles. You just need to choose chicken, shrimp, or tofu, and the chef will get started in preparing this dish just right. Your selection will get grilled to perfection and then tossed in tender rice noodles covered in a sweet and tangy sauce. Chopped peanuts and cilantro go over top after that to perfectly complete this meal.

Crispy Garlic Shrimp
When you’re craving fresh ocean flavors, you cannot go wrong with the Crispy Garlic Shrimp. To create this dish, the chef tosses shrimp in a flavorful batter and fries them until golden brown. After that, they’re tossed with roasted onions, bell peppers, herbs, and garlic. Jasmine rice comes alongside to bring it all together.

Lemongrass Fried Chicken
The Lemongrass Fried Chicken offers bright, bold flavors in every last bite. This dish begins with bone-in chicken marinated in fresh herbs and spices before getting battered and fried. Once that’s done, the chef plates it up alongside jasmine rice and green papaya salad. And then it’s completed by a generous cup of their signature homemade sweet chili dipping sauce.

During the summer, the crew turns up the good vibes by inviting musical guests to play for their patrons. Local musicians like TJ Fevella come by to play an evening set, amplifying the dining experience with their amazing tunes. If you’d like the inside scoop on when these events are happening, either ask the food truck crew or follow their social media pages.

Insider Tips:
-Although you can order online, you still have to stand in line to pick up your food. They do not have a separate takeout pickup window, leaving your food sitting for a while longer than you might like.
-If you eat at the picnic tables, you’ll likely see wild chickens running about. Don’t feed them, or they may see it as an invitation to come get another bite of your food when you’re not looking.
